soup of the day: gazpacho



now is a good time for a pre-christmas detox, so it’s nothing but soup, juice and tea for the next five days. but i will not accept any culinary suffering. if soup it is, then soup had better be good.

having spent a larger part of my youth in the spanish region of andalucia, i consider their gazpacho (a cold vegetable soup from the region) to be one of the healthiest and tastiest soups – and ideal for a detox week, because it consists of not much else than raw vegetables. there are a million different recipes for gazpacho (every spanish woman has her own). my quick and easy gazpacho recipe is inspried by the wonderful enriquetta, now in her 80s, who made me her own type of gazpacho for many years.

(serves 6-8)

2 (bell) peppers
1 cucumber
1 kg tomatoes
2 red onions
2 garlic cloves

It’s Amazing the Plans Enough Wine Will Inspire

Well again, it'll be mostly a recap in photos. Juices, tofu pineapple stir fry (that D loved so much, he ate it two days in a row!), panera sammich, hot chcolate, Mexican quinoa bowl, cauliflower soup, veggie chili, baked oatmeal, and wine.

Today I'm making some Mexican flavored tofu for the week plus some falafel-ish chickpea burgers.

One thing that's awesome about my juicer – is I have far less wasted produce. If it looks like something only will last another day or two – I juice it! I've had two juices this week that yielded over 24 ounces just by cleaning out the fridge!

I got in all but one of my runs this week. I still got workouts in (DVD one day, and yoga the others), so I'm not stressing it.

The group run this week was canceled due to a local race (that I did not do)…
